Creamy Pesto Chicken

Chicken is so versatile and something we enjoy as a family whether roasted on a Sunday, stuffed or served in a delicious dish with rice or pasta. I'm always trying to find new ways to cook it and as pesto is a craving of mine at the moment I decided to add that into a recipe and try something new.

I was so eager to tuck in I only snapped a quick pic with my mobile...




Ingredients
(Serves 4)
4 chicken breasts
150g cherry tomatoes
2tbsp pesto
4 tbsp creme fraiche

Pesto Chicken, Spinach and Tomato Tart

With it being half term there are plenty of opportunities to get busy baking in the kitchen and Minxy loves to be hands on when it comes to cooking. She made this delicious pastry tart using Jus-Rol pastry on Monday and it was all gone by the evening! 

It's ideal for a hot lunch or light dinner, you can even slice it and take it on a picnic - it's so versatile!

Cooking with McCain - Pesto Chicken

When you don't have the time to spend hours in the kitchen but you need a carb kick for energy, McCain Ready Baked Potatoes are a convenient option. They only take a few minutes in the microwave and provide a just baked taste for your favourite toppings to be piled on top. Delicious!

I'm a huge fan of potatoes in general so I was keen to see if these lived up to my expectations. We were sent a box to try along with the ingredients to make McCains recipe for Pesto Chicken too. The recipe is very quick which saved a lot of time and hassle - it's ideal for after a long day at work or a session at the gym, to fit in around school clubs and activities or as a healthy alternative to a takeaway.

Project 365 - A Photo A Day #3









Our week that was...

Sunday - The majority of the day was spent building the Mini Mes' lovely new furniture that we received from Ikea.

Monday - We had building work being doing on our home so I escaped for lunch with my mum! I had a lovely cheesecake for dessert. Delicious.

Tuesday - The post cage has been removed from the front door as the work has been done on the property to allow easier access... this resulted in nibble marks from the poochie on my letters!! Tut.

Wednesday - The first rainbow I've seen in ages. I stopped on the school run to snap a picture as requested by the Mini Mes.

Thursday - A yummy delivery of sweets!

Friday - Another winter warming dinner. This time pesto chicken with cheese dumplings.

Saturday - A morning of baking and a raspberry sauce on the cooker.


I think I take a few too many photos of food!!
