Chocolate Orange Custard Tart

With the Great British Bake Off back on our screens I've been drooling over the delightful creations each Wednesday and I've once again been inspired to bake something of my own.
With custard tarts featuring last week I thought I'd make one, but with such a sweet tooth I felt I needed to throw some chocolate in too!

With a crisp pastry and smooth, rich centre this is truly indulgent.
It goes perfectly served with fresh berries and or whipped cream.

Caramel Choux Pastry Buns

I've really been inspired by The Great British Bake Off over the past few weeks and I've found myself creating some new and tasty treats in the kitchen. I've made Chocolate and Cinnamon Whirls, a Raspberry and White Chocolate Roly Poly and this week I've had a go at choux pastry for the first time. 

It was actually a lot easier than I expected which again spurs me on to make and bake even more!



Ingredients
For the pastry
85g butter
200ml water
3 eggs
100g flour
Pinch of salt

For the caramel sauce
25g butter
3tbsp brown sugar
70ml double cream

For the filling
284ml double cream (1 large pot)
2 heaped tbsp icing sugar


Method
  • Preheat the oven to 180 degrees and line a baking tray
  • Melt the butter with the water in a pan on a medium heat, as soon as it boils remove from the heat and mix in the flour and salt until smooth.
  • Allow to cool completely then add the eggs whisking until fully combined
  • Spoon the mixture into 8 even rounds in the baking tray
  • Cook for 25-30 minutes until golden brown
  • Allow to cool and slice in half
  • To make the caramel sauce heat the butter, sugar and cream on a low heat until smooth and allow to cool
  • To make the filling gently mix the cream with the icing sugar until thick
  • Scoff!

Raspberry and White Chocolate Roly Poly

Having seen the Great British Bake Off on Tuesday this week with its delicious pastries and suet puddings, I decided to make my own. I've used suet in dumplings before but never for a sweet dessert so I opted for a jam and chocolate filled version which the entire family really enjoyed!




Ingredients
300g self raising flour
90g sugar
135g suet
150ml milk
Raspberry Jam
100g white chocolate

Method
Preheat the oven to 180 degrees
Combine the flour, suet, sugar and milk together in a bowl to form a dough
Roll the mixture out to around 20cm by 30cm in size
Cover with the jam leaving an inch boarder and then sprinkle with the broken chocolate
Roll from the short side and press the end down firmly to seal the filling inside
Place onto a lightly buttered sheet of grease-proof paper and seal it around the roly poly (I used bulldog clips)
Bake for 45 minutes until golden brown
Allow to cool slightly
Scoff!



Delicious with ice cream or custard.

Chocolate and Cinnamon Swirls

The Great British Bake Off has returned to our TVs *woop* and after watching this weeks bread related episode I was inspired to make some dough of my own! Having a sweet tooth I opted for something a little naughty and these Chocolate and Cinnamon Swirls and seriously gooey and taste delicious - a tempting treat.

I'm not keen on spending hours waiting for dough to rise so this is quite a quick recipe too where only one prove is required!



Ingredients
 55g Butter
175ml Milk
50g Caster sugar
410g Flour
1/2 tsp Salt
7g Yeast
1 egg
50ml water

Filling
100g Butter
170g Brown sugar
120g Chocolate (we used Lindt)
1 tbsp Cinnamon



Pre-heat the over to 180 degrees.
Gently heat the milk and butter together in a pan until the butter has melted then set aside to cool slightly.
Combine the flour, yeast, sugar and salt in a bowl. Pour in the milk and butter mixture and mix thoroughly to form a soft dough, adding the water a little at a time as required.
Put the dough onto a floured surface and knead for a few minutes until smooth.


Place the dough back into the bowl and cover with a damp towel. Leave it to rise for around 40 minutes until springy to the touch then roll out to 12" by 9" in size.
In a bowl mix together the brown sugar, butter and cinnamon then spread it across the dough evenly.
Sprinkle the chocolate over the top and then roll it up into a log shape.


Slice into 12-15 pieces and place on a baking tray, cut side up, and bake for 20 minutes until golden.
Scoff!


A nice alternative to chocolate is raisins then a drizzle of icing on top!
