Pink Pancakes


Today being Shove Tuesday, aka Pancake day, means that pancakes will definitely be on our menu with a variety of mouth-wateringly good toppings and fillings too.



I prefer savoury ones personally; packed with cheese and chorizo and a splash of Worcester sauce.




The Mini Mes however like the sweeter versions (not surprisingly). We had some on Sunday evening for dessert with warm caramel sauce but they enjoy them with traditional toppings of sugar and lemon or healthier alternatives of fruit.

With Valentine's Day just 2 sleeps away we decided to make some pink heart shaped ones after lunch today...


We mixed in 3 drops of pink food colouring to our usual pancake recipe then used cake cutters to shape them. Minxy had syrup and lemon on hers and Jamster had syrup with sprinkles for a colourful result.

Soap making, Christmas Cards and Shopping - Our weekend that was

Another weekend seems to have flown by but we certainly managed to squeeze in quite a bit...

Saturday
After a nice lay in I whipped up some pancakes for brunch and then we got the soap making kit out. We made a lovely variety of coloured and scented products that the Mini Mes have decided to sell to family and friends to make themselves some money for their boxes. After lunch we had fun on the X-Box playing various sports and then we did some baking. We made a delicious warm dessert, sticky syrup sponge, which everyone enjoyed!

In the afternoon we chilled out with pizza and watched Dolphin Tale. Thankfully the lights were off so the Mini Mes couldn't see me welling up, soppy thing!



Sunday
We met up with my parents in the morning for breakfast at Wetherspoons and a bit of shopping in town. I was good and had a sausage roll instead of a large full English like the Mr but it looked unbelievably good. We had a browse around the shops and I fell in love with this beautiful charm for my bracelet. I behaved and didn't purchase it so I've popped it on my wishlist for Christmas instead... I've been a good girl all year Santa, promise!

In the afternoon we watched Mr Popper's Penguins and Jingle All The Way as requested by the Mini Mes cuddled up on the sofa and I then I made Toad in the Hole for everyone. I'm still doing Jenny Craig and really enjoying it. First weigh in tomorrow eek!

Pancakes

If you’re looking for a quick and simple recipe, with minimal ingredients you’ve come to the right place! This has been made time and time again in our household for a speedy breakfast, a filling snack or as a tasty dessert.



Ingredients (makes 5)
  • 4oz plain flour
  • 1 egg
  • 250ml milk
  • Oil for cooking


Method
  • Add the flour to mixing bowl and create a well in the centre then tip in the egg.
  • Beat the mixture continously with a whisk and gradually pour in the milk until smooth.
  • Heat a frying pan with a small amount of oil (approx 2tbsp) and tip some of the mixture into the centre, rotating the pan to coat the base thinly.
  • Cook for around one minute and then flip the pancake over.
  • Once lightly golden in colour slide the pancake onto a plate.
  • Serve with scrummy toppings!
